Melting Roasted Broccoli with Big Cloves of Garlic | halfbakedharvest.com

A simple fall side that I could honestly serve with just about anything. The broccoli roasts with big cloves of garlic until tender inside with crispy edges. Then butter, fresh thyme, and a touch of nutmeg are added to the pan and roasted until the butter browns around everything. Add a squeeze of lemon and flaky sea salt. The garlic becomes soft and melts into the browned butter, making everything extra delicious. Simple and such a good side for Sunday night dinner.

  • 1. Preheat the oven to 425° F.
    2. On a baking sheet, toss the broccoli and garlic with olive oil, salt, and pepper. Roast for 20 minutes.
    2. Toss the broccoli, add the butter, thyme, and nutmeg. Roast another 10 to 15 minutes, until the broccoli is tender with crisp, caramelized edges, the garlic is soft, and the butter has browned.
    Serve the broccoli and garlic with a squeeze of lemon juice. Finish with flaky sea salt and black pepper. Serve warm.

Notes

Note: For extra crunch, finish with buttered toasted breadcrumbs or toasted pine nuts just before serving.
